I have a question: Could it be designed kind of opposite, so the material is the objects and text, and the cutaways are the background? I've seen designs both ways. Would that work ok and look good? That's kind of how the customer's logo looks like.
I will pay you for what you've already done, but i also want to see if that is possible...
 
Or, maybe the text can stay the same, but have the objects be solid and the background cutaway. I understand if it won't work...

its possible but:

the text will have to have rings around it to connect the letters together and that detracts from the legibility imho

the objects will be the same except they will be floating in open space so there will have to be some sort of webbing elements to tie them together or scale them up to where they are touching each other and touching the inner text ring

all that would look much different than the original

the only other way is to go with 2 layers - white over black - with holes inside the black animal shapes - 3 layers to have white behind those holes
 
I will ask the customer how he likes the one you already did. Hopefully, it will be good as-is.
I like how you did it and how quickly! I'd like to learn how to do the artwork more quickly. That has been the one thing that has held me back from trying to sell more signs...
The other barrier is a lot of people never pay for them...
 
I think drawing custom art and cutting/finishing/selling metal art are different fields with different skills - you can do a lot of one or a little of both - and the truth is, its a long hard road to draw your own custom art like this better, faster or cheaper than this - so you should farm out the custom art and don't let that hold you back - at this point - drawing your own art won't hardly make you more successful like selling (and collecting) will
